Ok, so this is straying a wee bit from the topic, but does anyone have any recipes/methods for making elderflower 'champagne'? I want to start harvesting the hedgerows now!

not sure about champagne, but i cant wait to try them dipped in batter and fried! Ive heard it tastes a bit like cream soda... watch this space!

I have a recipe for elderflower champagne 'somewhere'. I will see if I can find it and will post it when I do. I have made it and can confirm that it is very good. Unfortunately, it's too late for this year, but will be good for next spring.I have tried freezing elderflowers but just ended up with a soggy mess!

Elderflower fritters are also very good with a sprinkle of caster suger and lemon juice, jum!
