Patxaran again

Hello my lovelies.

Just back from the Basque Country having had a lovely time - what wonderful people & brilliant food. Not to forget the Patxaran of course - yumski!

Managed to bring back 3 litres of anisette in my suitcase & can't wait till sloe picking time.

Love to all!

Re: Advice for a beginner

Haven't made the chocolates but have totally sorted de-stoning the sloes. I tried the flat-of-the-blade method (messy; didn't work; sticky) and a high-tech looking olive stoner (rubbish) but finally found that a cheap garlic press with integral cherry stoner worked like a charm. Yippee!

Just bottled this year's vintage!

Bottled the sloe gin & patxaran last night. 12 bottles altogether; mostly 500ml but some 1 litre. So far so good but will be better after standing. Tonight, I made sloe gin chutney following the recipe somewhere on the board. Spent flipping hours and hours destoning pounds and pounds of sloes; follo...

Re: Fermenting sloes

Our old family recipe (i.e. my Sister-in-Law gave it to my dh) tells us to allow the pricked sloes to sit with the sugar until the juice starts to flow, then to add the gin. Not sure I'd leave it a month though!!!

Re: Almonds??? Alternative ingredients

Almonds sounds yummy. My Olde Family Recipe contains almond essence (not that I ever use it; I use vanilla sugar instead cos I prefer the taste of vanilla).

I'm sure it will be gorgeous.

Re: How long will Sloe's keep in the Freezer?

Hola Blackthorn, que tal? (I can't do the upside-down question mark thingy.) Oooh I'm so happy to have read this thread. I had loads of sloes in the freezer from last year and the year before - never quite got round to using them (just too languid I guess) so I bunged some of them in with a couple o...

Re: Don't prick frozen sloes ....

Re. how practical it is to go back & try and mash the unpricked sloes - I've done it, it's a nightmare. I first started off chasing individual sloes about the jar with a skewer - that was a larf; didn't work at all. Eventually I resorted to using the potato masher (it was a rumtopf with a wid...

Quite right about anisette vs. pastis but I couldn't be a***d to get hold of anisette and I have to say the pastis-based version was scrummy. All gone now, sadly, but delicious while it lasted *sigh*.

Today's the day!

Today has been decreed as the day for filtering the sloe gin and pacharan at Casa Lil. I'd forgotten how incredibly sticky sloe gin is! Very turbid this year as well; I have been forced to muslin-strain before wine-filtering; tried to skip this step but clogged up the works something chronic (the wi...

That's really interesting. I've never bothered to measure it but I never thought you'd get that much juice out of the sloes. They always seem really juicy when I get them out of the gin around mid-December. How fascinating.

Straining through a muslin cloth is probably a good idea but I think squishing will result in too much sediment. I've had to strain mine over and over again in the past and the only way I've found satisfactorily to remove sediment is to buy a Vinbrite wine filter, which has worked spectacularly well...

I always work on the basis that the alcohol level is near as dammit to that of the original gin, as no fermentation has taken place (some dilution, possibly, if the sloe juices have left the sloes but I usually assume that's pretty negligible.) I'd be interested to hear other opinions.

Hello A123 down there in South Wales and greetings from up here on the North Wales coast. I don't know if there's an official name for your type of jar but I'd call them Kilner jars (I think that's a make rather than a type if you see what I mean). I've used slightly leaky Kilners for years (though ...
